1. Watermelon Feta Salad

Ingredients:

  • 4 cups cubed watermelon

  • 1 cup crumbled feta cheese

  • 1/4 cup fresh mint leaves, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic glaze

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, and chopped mint leaves.

  2. Drizzle with olive oil and balsamic glaze.

  3. Season with salt and pepper to taste.

  4. Toss gently to combine and serve chilled.

2. Watermelon Smoothie

Ingredients:

  • 2 cups cubed watermelon

  • 1 cup strawberries, hulled

5. Watermelon Sorbet

Ingredients:

  • 4 cups cubed watermelon

  • 1/4 cup sugar

  • 1/4 cup water

Instructions:

  1. In a blender, puree the watermelon until smooth.

  2. In a small saucepan, combine the sugar, lemon juice, and water. Heat until the sugar is dissolved, then let it cool.

  3. Stir the sugar mixture into the pureed watermelon.

  4. Pour the mixture into a shallow dish and freeze for about 1 hour, until the edges start to freeze.

  5. Stir the mixture with a fork to break up the ice crystals, then return to the freezer.

  6. Repeat every 30 minutes until the sorbet is fully frozen and has a smooth texture.

  7. Serve in bowls or cones and enjoy!
